Veteran Pitmaster’s Return Sparks Excitement in San Antonio’s BBQ Scene
SAN ANTONIO, TEXAS (Jan. 23, 2025) – The sizzling aroma of smoked brisket and the legendary pits of Two Bros. BBQ Market are welcoming back a familiar face. Laura Loomis, a trailblazer in the Texas barbecue world and one of the state’s few female pitmasters, is returning to the Jason Dady Restaurant Group concept as head pitmaster, marking a thrilling new chapter for San Antonio’s barbecue community.
Loomis’s journey with Two Bros. BBQ Market began humbly, starting as a cashier before finding her passion at the smoker. By 2016, she had taken the reins as pitmaster, earning accolades from Texas Monthly, Food Network, and Southern Living. Eater National recognized her in 2017 as a “Young Gun,” a distinction reserved for rising stars in the culinary world.
“Laura’s return to the pits is such a special moment for us,” shared Jason Dady, co-founder of the Jason Dady Restaurant Group. “Her energy, innovation, and dedication to the craft are unmatched. She has the talent to not only preserve the traditions of Texas barbecue but also elevate them to new heights.”
Loomis’s time away from Two Bros. BBQ Market was far from idle. She sharpened her culinary prowess under renowned chefs, most recently serving as executive sous chef at Tre Trattoria. There, she mastered the art of Italian cuisine, from hand-rolled pasta to Tuscan-inspired creations. This diverse expertise adds new dimensions to her barbecue approach, blending tradition with creativity.
“Barbecue is an ever-evolving craft, and every day in the pits is an opportunity to learn and grow,” said Loomis. “I’m thrilled to be back at Two Bros., bringing fresh ideas while honoring the traditions that make Texas barbecue so special.”
As a multifaceted chef and pitmaster, Loomis is poised to build on Two Bros. BBQ Market’s legacy, blending her award-winning expertise with a forward-thinking approach. Guests can look forward to bold flavor profiles, innovative techniques, and the same dedication to quality that has made the restaurant a Texas barbecue icon.
