Rosario’s to Host Four-Course Carabuena Tequila Dinner Aug. 13
SAN ANTONIO, Texas — Rosario’s ComidaMex & Bar will host an intimate four-course Carabuena Tequila Pairing Dinner on Thursday, Aug. 13, bringing together chef-inspired Mexican cuisine, premium tequila expressions and handcrafted cocktails.
The special dinner will take place from 6:30 to 9 p.m. inside Rosario’s private La Caliza dining room and will be limited to just 30 guests.
Hosted by Victor Diaz, owner and founder of Carabuena Tequila, the evening will feature a welcome cocktail followed by four courses, each paired with a Carabuena Tequila expression or cocktail selected to complement the flavors of the dish.
Guests will check in beginning at 6:30 p.m. at the Carabuena trailer outside the restaurant before dinner begins promptly at 7 p.m.
The menu includes an Ahi Tuna Tostada with toasted sesame, citrus-chile dust, avocado mousse and sweet potato hay, followed by Grilled Shrimp Jicama Tacos topped with roasted salsa macha and fried shallots.
The main course features Short Rib Mole Rojo served with creamy Manchego polenta and roasted vegetables.
Dessert will be a Buñuelo Especial finished with spiced sweet cream, pineapple marmalade and cajeta drizzle.
The dinner will be held inside La Caliza, Rosario’s private dining space featuring an original 1860s caliche wall, chandelier and artwork by Eva Marengo Sanchez. The room accommodates up to 30 seated guests, matching the limited capacity for the tequila pairing event.
