Pinchy’s Lobster & Rawbar Brings New England-Style Seafood to Historic Downtown Boerne
Boerne, TX – Boerne’s historic downtown is set to welcome a unique seafood experience in Spring 2025 with the opening of Pinchy’s Lobster & Rawbar, an urban seafood shack offering fresh New England-style seafood. Pinchy’s promises to bring the flavors of the Northeast to the heart of Texas, serving up sushi rolls, oysters, crab legs, peel-and-eat shrimp, and more. Diners will even find a taste of comfort food with burgers, a popular offering from Pinchy’s original Tennessee location.
Pinchy’s is located at 250 River Rd, Boerne, TX and proudly joins the Boerne community with a background rooted in service. Owned and operated by first responders and veterans, Pinchy’s founders have a strong connection to both their community and country. Nick Sr., an Army veteran, Nick Shaw, an active New York State Police officer, Phil Robertson, a Navy veteran, and Heather and Jason Wood, Army veterans, are dedicated to creating a welcoming atmosphere for everyone, especially those who have served.
The team at Pinchy’s has encountered two main questions from the community as they prepare to open in Boerne:

Pinchy’s is not a chain. It’s a family-owned and operated establishment with only one current location in East Tennessee and a new location coming to Boerne. The owners envision potentially growing into a small collection of restaurants, but they don’t intend to expand into a chain. Their goal is to keep operations local and true to their roots.
2) Why choose Boerne, Texas, from Sevierville, Tennessee?
Owners Nick and Nikol DiBartolomeo, originally from the Northeast, have been regular visitors to Boerne for over a decade due to family ties in the area. Over time, they fell in love with the Hill Country’s charm, friendly community, and historic character, making Boerne the ideal location for their second restaurant. The DiBartolomeos currently reside in East Tennessee but plan to split their time between Tennessee and Texas to bring a little piece of New England to the Lone Star State.
Managing Partner and family friend Phil Robertson will oversee daily operations, ensuring that Pinchy’s is a welcome addition to Boerne’s local dining scene. The team is excited to bring fresh, high-quality seafood to the community and to make Pinchy’s a place where locals and visitors alike can gather for good food and good company.
