Chef Jason Dady Launches New Menus at Roca & Martillo

SAN ANTONIO, Texas (Sept. 8, 2025) โ€” Roca & Martillo, the Tuscan Italian restaurant from Jason Dady Restaurant Group, has unveiled refreshed lunch and dinner menus along with the launch of weekend brunch service. Situated at The Rock at La Cantera, the restaurant continues to showcase Chef Jason Dadyโ€™s signature blend of Tuscan and Texan flavors through handmade pastas, pizzas, entrรฉes, and more.

Pasta Program and Daily Specials

At the heart of the menu is an extensive pasta program featuring bronze-extruded noodles with rustic texture and hand-shaped stuffed pastas, all made fresh in-house. Standouts include the Tuscan Campanelle alla Bolognese, with bell-shaped pasta, and the Texas Smoked Brisket Lasagna. Guests can also enjoy elevated stuffed pastas such as Wild Boar-Smoked Gouda Ravioli with braised wild boar ragu and Blue Crab & Parsnip Cappelletti with rosรฉ butter and fresh dill.

Daily rotating pasta specials include:

  • Tuesday: Classic Tortellini en Brodo

  • Wednesday: Mozzarella-Stuffed Wagyu Meatballs with housemade spaghetti

  • Thursday: Truffled Raviolo alโ€™Uovo

Dinner Highlights

The dinner menu expands with Tuscan-Marinated Prime Steaks served with crispy Tuscan potatoes and Calabrian chili crunch, alongside entrees such as Sweet Tea-Brined Pork Tenderloin with peach mostarda, Pan-Seared Atlantic Salmon Fillet with Mediterranean orzo salad, and Parmigiano Fried Chicken with Yukon Gold mashers and Parmigiano gravy.

Lunch and dinner also feature a lineup of cast-iron pizzas, including Soppressata & Pepperoncini, Balsamic Onion & Goat Cheese, and Pizza Bianca. Small plates and shareables round out the menu, from the Spicy Pepperoni Dip to Burrata di Bufala with fresh strawberry.

Weekend Brunch Debut

Brunch brings inventive takes on Italian and American classics, including Smoked Brisket Hash, Breakfast Brioche Sammies, and indulgent sweets like Tiramisu Pancakes and Blueberry Waffles with lemon ricotta. Guests can also enjoy the Spritz Tower โ€” a tableside aperitivo experience โ€” plus brunch favorites such as Frozen Peach Bellinis, Espresso Martinis, and Smoked Bloody Marys.
