San Antonio, TX — In a sizzling announcement, renowned chef Nicola Blaque, celebrated for her culinary prowess, is set to launch a mouthwatering venture, Freight Fried Chicken, at the iconic Pearl’s Food Hall in Bottling Department come January. The highly anticipated concept will take the reins from Chef Nicola’s current endeavor, Mi Roti.
Freight Fried Chicken promises to be a delectable ode to the rich culinary heritage and traditions shared among Black Americans, with a specific focus on the women who, in the aftermath of the Civil War, turned fried chicken into a symbol of economic resilience. The concept is poised to deliver a flavorful journey through history, celebrating the roots and cultural significance of this beloved dish.
“I’m really excited about Freight Fried Chicken because it’s about more than food,” said Chef Nicola Blaque. “It’s an opportunity to tell the story of women I identify with, people who had a vision to create something and found a way to support their families while also uniting communities. I admire women like the Waiter Carriers and Emma Koehler at Pearl who found a way to not only overcome hardships, but to give back to their community in the process. These are stories worth telling.”
As Chef Nicola Blaque steps into this exciting new project, she aims to pay homage to the legacy of those who transformed fried chicken into a symbol of strength, creativity, and community. The chicken will use a dry batter, similar to what was served by the Waiter Carriers. The chicken will be served with biscuits as how they were served on the trains years ago. Guests also can expect chicken tenders, a fried chicken sandwich, mac ‘n’ cheese and seasoned fries on the Freight Fried Chicken menu.
Fans of Mi Roti are encouraged to savor their favorite dishes one last time as the stall bids farewell on December 31. This marks the end of an era for Mi Roti, paving the way for the eagerly anticipated Freight Fried Chicken.
